2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon chili powder

Salt and pepper to taste

1/4 cup chipotle ranch dressing (store-bought or homemade)

1 cup cooked brown rice

1 cup black beans, rinsed and drained

1 cup corn (fresh or frozen)

1 cup diced tomatoes

1 avocado, sliced

1/2 cup shredded mozzarella cheese

4 large flour tortillas

Fresh cilantro, for garnish (optional)

Lime wedges, for serving

Instructions
 

Marinate the Chicken: In a bowl, mix olive oil, garlic powder, onion powder, smoked paprika, chili powder, salt, and pepper. Coat the chicken breasts with the marinade, cover, and let them marinate in the fridge for at least 30 minutes.

    Grill the Chicken: Preheat your grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C). Once done, remove from the grill and let them rest for a few minutes before slicing.

      Prepare the Burrito Filling: In a large bowl, combine cooked brown rice, black beans, corn, diced tomatoes, and chipotle ranch dressing. Mix everything until well combined.

        Assemble the Burrito: On each flour tortilla, layer a generous portion of the rice and bean mixture. Add sliced grilled chicken, avocado slices, and a sprinkle of mozzarella cheese.

          Wrap the Burrito: Fold the ends of the tortilla inwards, then roll it tightly from one side to the other to secure the filling inside.

            Grill the Burrito: If desired, grill the burrito on the grill or in a skillet over medium heat for 2-3 minutes on each side, until the tortillas are golden and crispy, and the cheese is melted.
