Ingredients

1 cup pecan halves

1 cup granulated sugar

1/4 cup unsalted butter

1/4 cup heavy cream

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

1/2 teaspoon sea salt (optional)

1 teaspoon coconut oil (optional, for smoother chocolate)

Instructions

Toast the Pecans: Preheat your oven to 350°F (175°C). Spread the pecan halves on a baking sheet and toast them in the oven for 8-10 minutes, until fragrant and lightly browned. Let them cool.

Make the Caramel: In a medium saucepan over medium heat, combine the granulated sugar and butter. Stir continuously until the butter melts and the mixture turns into a light amber color, about 5-7 minutes. Be careful not to let it burn.

Add Heavy Cream: Slowly add the heavy cream to the caramel mixture while stirring constantly. It will bubble vigorously, so be cautious. Continue to stir until fully combined and smooth. Remove from heat and stir in the vanilla extract.

Assemble the Turtle Clusters: On a parchment-lined baking sheet, arrange small clusters of toasted pecans (about 3-4 pecans per cluster). Spoon a generous amount of the caramel over each cluster, allowing it to drip down slightly.

Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

Cover the Clusters: Using a spoon, drizzle melted chocolate over the caramel-topped pecans, ensuring you cover them well. If desired, sprinkle a pinch of sea salt on top of each cluster for an extra flavor dimension.

Set and Cool: Allow the chocolate to set at room temperature for about 30 minutes, or place the baking sheet in the refrigerator for quicker setting.

Serve: Once the chocolate has hardened, carefully remove the turtle clusters from the parchment paper and serve. Enjoy your delicious treats!
