Ingredients

2 ripe bananas

1/3 cup creamy peanut butter

1 cup dark chocolate chips

1 tablespoon coconut oil (optional, for smoother chocolate)

Sea salt, for sprinkling (optional)

Toothpicks or popsicle sticks (for easy handling)

Instructions

Prepare the Bananas: Peel the bananas and slice them into 1/2-inch thick rounds. You should have about 20 banana slices total.

Make the Sandwiches: Spread a generous teaspoon of peanut butter on one banana slice and top it with another slice to create a sandwich. Repeat this process for all banana slices.

Freeze the Sandwiches: Place all the assembled banana-peanut butter sandwiches onto a parchment-lined baking sheet. Make sure they are not touching. Insert a toothpick or popsicle stick into the center of each sandwich for easy dipping. Freeze for about 1-2 hours, or until completely solid.

Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.

Dip the Sandwiches: Remove the frozen sandwiches from the freezer. Dip each one into the melted chocolate, ensuring it is fully coated. Allow any excess chocolate to drip off.

Set the Chocolate: Place the chocolate-covered sandwiches back onto the parchment-lined baking sheet. If desired, sprinkle a small pinch of sea salt on top of each sandwich before the chocolate sets.

Final Freeze: Return the baking sheet to the freezer for an additional 30 minutes or until the chocolate is fully hardened.

Serve and Enjoy: Once set, serve the chocolate-covered frozen banana peanut butter sandwiches immediately or store them in an airtight container in the freezer for up to 1 month.

Prep Time: 15 min | Total Time: 3 hours (including freezing time) | Servings: 10 sandwiches
