Ingredients

1 cup creamy peanut butter

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

2 teaspoons vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

Extra peanut butter for drizzling (optional)

Sea salt for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Baking Pan: Grease a mini muffin tin or line it with mini muffin liners.

Mix Wet Ingredients: In a large mixing bowl, cream together the peanut butter, softened butter, brown sugar, and granulated sugar until smooth.

Add Egg and Vanilla: Mix in the egg and vanilla extract, continuing to beat until well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined.

Fill Muffin Tin: Scoop about 1 tablespoon of dough into each muffin cup, filling them about halfway.

Create a Well: Use a small spoon or your fingers to create a small well in each dough ball. This will hold the chocolate later.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Be careful not to overbake; they should be soft in the center.

Add Chocolate Chips: Remove the muffin tin from the oven and immediately place approximately 5-6 chocolate chips into each well.

Cool: Allow the cookie cups to cool in the tin for about 10 minutes before transferring them to a wire rack to cool completely.

Drizzle (Optional): If desired, drizzle a little extra peanut butter over the cooled cookie cups and sprinkle with sea salt for an added touch of flavor.

Serve: Enjoy these deliciously decadent cookie cups as a delightful treat with friends and family!
