200g dark chocolate (70% cocoa), chopped

3 large eggs, separated

2 tablespoons granulated sugar

1 cup heavy whipping cream

1 teaspoon vanilla extract

1 cup fresh raspberries

2 tablespoons raspberry puree (optional, for drizzling)

Pinch of salt

Instructions
 

Melt the Chocolate: In a heatproof bowl over a pot of simmering water (double boiler), melt the dark chocolate, stirring until smooth. Remove from heat and let cool slightly.

    Whisk Egg Yolks: In a separate bowl, whisk the egg yolks with granulated sugar until pale and creamy. Stir in the cooled melted chocolate and vanilla extract until well blended.

      Beat Egg Whites: In another bowl, whisk the egg whites with a pinch of salt until stiff peaks form. Gently fold the egg whites into the chocolate mixture, taking care not to deflate the mixture.

        Whip Cream: In a mixer, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture, incorporating it smoothly.

          Prepare Molds: Lightly grease several silicone dome molds. Spoon the mousse into each mold, filling them to the top. Tap gently on the counter to release any air bubbles.

            Refrigerate: Cover the molds and refrigerate for at least 3 hours, or until set.

              Unmold and Serve: Once set, carefully peel away the silicone molds. Place the mousse domes on individual serving plates.

                Garnish: Top each dome with fresh raspberries and, if desired, drizzle with raspberry puree for an added touch.
