Ingredients

1 cup chocolate cookie crumbs (like Oreos or chocolate graham crackers)

4 tablespoons unsalted butter, melted

8 oz cream cheese, softened

1/2 cup sugar

1 teaspoon vanilla extract

1 cup heavy cream

1/2 cup fresh strawberries, pureed

1/4 cup powdered sugar

Fresh strawberries, halved, for garnish

Chocolate shavings or curls, for garnish

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C).

Prepare Cookie Base: In a mixing bowl, combine chocolate cookie crumbs and melted butter until the mixture resembles wet sand.

Form Bases: Line a 12-cup muffin tin with paper liners. Press about 1 tablespoon of the cookie mixture into the bottom of each liner to form a solid base. Use the back of a spoon to pack it tightly.

Bake Bases: Bake the cookie crusts for 5-7 minutes until set. Remove from the oven and let cool completely.

Mix Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with sugar and vanilla extract until smooth and creamy.

Whip Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.

Add Strawberry Puree: Gently fold in the strawberry puree into the cheesecake mixture until fully blended.

Fill Cupcakes: Spoon or pipe the strawberry cheesecake filling over the cooled cookie crusts, filling each liner to the top. Smooth out the tops with a spatula if needed.

Chill: Place the mini cheesecakes in the refrigerator for at least 2 hours to set properly.

Garnish and Serve: Once set, remove from the fridge. Top each mini cheesecake with a halved strawberry and sprinkle with chocolate shavings or curls for a finishing touch.

Prep Time: 20 minutes | Total Time: 2 hours 30 minutes | Servings: 12 mini cheesecakes

                        - Presentation Tips: Present the mini cheesecakes on a decorative platter. Arrange some extra fresh strawberries around the cheesecakes for a vibrant and inviting look.
