Ingredients

For the Cookie Dough:

1 cup unsalted butter, softened

1 cup cream cheese, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

For the Cinnamon Sugar Coating:

½ cup granulated sugar

1 tablespoon ground cinnamon

For the Cheesecake Filling:

8 oz cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

Instructions

Prep the Oven and Baking Sheet:

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

      Make the Cheesecake Filling:

In a medium bowl, beat together the 8 oz cream cheese, powdered sugar, and 1 teaspoon of vanilla extract until smooth and creamy. Set aside.

          Prepare the Cookie Dough:

In a large bowl, cream together 1 cup of softened butter and 1 cup of granulated sugar until light and fluffy. Add the 1 cup cream cheese, mixing until well combined. Beat in the eggs one by one, then stir in 1 teaspoon of vanilla extract.

              Mix Dry Ingredients:

In a separate bowl, whisk together 2 ½ cups flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined.

                  Shape Your Cookies:

Using your hands, scoop a small amount of cookie dough and flatten it in your palm. Place a teaspoon of cheesecake filling in the center, then fold the dough over to encase the filling entirely. Roll it into a ball and place it on the prepared baking sheet, spacing the cookies about 2 inches apart.

                      Create the Cinnamon Sugar Coating:

In a small bowl, mix together ½ cup granulated sugar and 1 tablespoon ground cinnamon. Roll each cookie ball in the cinnamon sugar mixture until fully coated.

                          Bake:

Bake the cookies in the preheated oven for 12-15 minutes or until the edges are golden. The centers may look slightly underbaked, which is perfect to keep the filling nice and creamy.

                              Cool and Serve:

Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy your delicious churro cheesecake cookies!
