In a large mixing bowl, combine the rolled oats, ground flaxseed, cinnamon, nutmeg, and salt. Stir until evenly mixed.
Add the almond butter and honey to the dry ingredients and mix until everything is well combined. The mixture should be slightly sticky.
Fold in the chopped dried apples and mini chocolate chips (if using) until they are evenly distributed throughout the mixture.
Using your hands, take about a tablespoon of the mixture and roll it into a small ball. Repeat with the remaining mixture.
Place the energy bites on a parchment-lined baking sheet or plate.
Refrigerate the bites for at least 30 minutes to firm up before serving.
Store the energy bites in an airtight container in the fridge for up to one week.

Arrange the energy bites on a decorative plate and sprinkle a little extra cinnamon on top for added flair. They can also be packaged in small jars for gifting!
