1 can (8 oz) refrigerated cinnamon rolls

2 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp work well)

1/4 cup granulated sugar

1 tsp ground cinnamon

1/4 tsp nutmeg

1 tbsp lemon juice

1/4 cup brown sugar

1 tbsp all-purpose flour

1/2 tsp vanilla extract

1/4 cup chopped walnuts or pecans (optional)

Icing from cinnamon rolls for drizzling

Prepare the Cinnamon Rolls: Preheat your oven to 350°F (175°C). Open the can of cinnamon rolls and separate them. Roll each piece out into a flat circle to fit into a muffin pan.

    Make the Apple Filling: In a medium mixing bowl, combine the diced apples, granulated sugar, ground cinnamon, nutmeg, lemon juice, brown sugar, and flour. Fold in the nuts if using. Set aside to let the flavors meld.

      Assemble the Cups: Spray a muffin tin with non-stick spray. Gently press each rolled-out cinnamon roll into the bottom and up the sides of each muffin cup.

        Fill and Bake: Spoon the apple filling evenly into each cinnamon roll cup, pressing down slightly to pack it in. Bake in the preheated oven for 15-18 minutes or until the cinnamon rolls are golden brown and the apples are tender.

          Add the Drizzle: Remove the muffin tin from the oven and let it cool for about 5 minutes. Drizzle the icing that came with the cinnamon rolls over each cup.
