1 ½ cups all-purpose flour

1 cup granulated sugar

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

½ cup buttermilk

1 tablespoon ground cinnamon

½ cup brown sugar, packed

½ cup mini chocolate chips (optional)

1 cup powdered sugar (for icing)

2 tablespoons milk (for icing)

¼ teaspoon vanilla extract (for icing)

Instructions
 

Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.

    In a large mixing bowl, sift together the flour, granulated sugar, baking powder, baking soda, and salt until combined.

      In a separate bowl, cream together the softened butter and brown sugar until light and fluffy.

        Add eggs one at a time, mixing well after each addition. Then stir in the vanilla extract and buttermilk until fully combined.

          Slowly blend the dry ingredients into the wet mixture until just combined, being careful not to overmix.

            In a small bowl, mix the ground cinnamon and remaining brown sugar to create a cinnamon filling. Set aside.

              Spoon a tablespoon of cupcake batter into each liner, followed by a sprinkle of the cinnamon filling. Then, add another tablespoon of batter on top of the filling to cover it completely. If desired, sprinkle mini chocolate chips on top of the second layer of batter.

                Bake in the preheated oven for 18-20 minutes or until a toothpick inserted in the center comes out clean. Allow the cupcakes to cool completely in the pan for about 10 minutes before transferring them to a wire rack.

                  While the cupcakes cool, prepare the icing by mixing together powdered sugar, milk, and vanilla extract in a small bowl until smooth. Adjust the consistency by adding more milk or powdered sugar if needed.

                    Once the cupcakes are cooled, drizzle the icing on top and, if desired, sprinkle with additional ground cinnamon or chocolate chips for decoration.
