Ingredients
  

1 cup all-purpose flour

1 tablespoon granulated sugar

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1 cup water

1/4 cup unsalted butter

2 large eggs

1 teaspoon vanilla extract

Oil for frying (vegetable or canola)

1/2 cup granulated sugar (for coating)

1 tablespoon ground cinnamon (for coating)

Instructions
 

In a medium saucepan, combine water, butter, granulated sugar, and salt. Bring to a boil over medium heat while stirring until the butter melts.

    Once boiling, remove from heat and add the flour and 1/2 teaspoon of ground cinnamon. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.

      Let the dough cool for about 10 minutes, then add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until the mixture is smooth and glossy.

        Heat oil in a deep fryer or large pot to 350°F (175°C).

          Use a piping bag fitted with a star tip to pipe small bite-sized pieces of dough (about 1-2 inches long) into the hot oil. Fry in batches for about 2-3 minutes, turning occasionally, until golden brown and cooked through.

            Remove churro bites with a slotted spoon and allow to drain on paper towels.

              In a shallow bowl, mix 1/2 cup sugar with 1 tablespoon cinnamon. While churro bites are still warm, roll them in the cinnamon sugar mixture until well coated.
