Ingredients
  

4 cups day-old bread (such as baguette or brioche), cubed

4 large eggs

1 cup whole milk

1/2 cup heavy cream

1/2 cup granulated sugar

1 tablespoon vanilla extract

2 teaspoons ground cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/2 cup brown sugar

1 tablespoon cinnamon (for topping)

Optional: maple syrup, for serving

Instructions
 

Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or butter.

    In a large mixing bowl, combine the cubed bread, melted butter, and half of the granulated sugar. Toss gently until the bread is well-coated and set aside.

      In another bowl, whisk together the eggs, milk, heavy cream, vanilla extract, 2 teaspoons of cinnamon, and salt until fully combined. Pour this mixture over the bread cubes and gently fold until all the bread is soaked.

        In a separate small bowl, mix the remaining granulated sugar, brown sugar, and 1 tablespoon of cinnamon together to create the cinnamon-sugar topping.

          Fill each muffin cup with the soaked bread mixture, packing it slightly but not too tightly. Sprinkle a generous layer of the cinnamon-sugar mixture on top of each muffin.

            Bake in the preheated oven for 20-25 minutes or until the tops are golden brown and the muffins are cooked through.

              Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack.
