Ingredients

4 pork sausages (your choice of herbal or spicy)

2 pounds potatoes, peeled and chopped

1/2 cup milk

4 tablespoons butter

Salt and pepper to taste

2 large onions, thinly sliced

2 tablespoons sugar (brown or white)

2 tablespoons all-purpose flour

2 cups beef or vegetable broth

1 teaspoon Worcestershire sauce

Fresh parsley, chopped (for garnish)

Instructions

Cook the Potatoes: In a large pot, add the chopped potatoes and cover them with cold salted water. Bring to a boil over medium-high heat and cook until soft, about 15-20 minutes. Drain and return to the pot.

Mash the Potatoes: Add milk, butter, salt, and pepper to the drained potatoes. Mash until creamy and smooth. Set aside and keep warm.

Cook the Sausages: In a large skillet over medium heat, cook the sausages until browned on all sides and cooked through, about 10-15 minutes. Once done, remove them from the pan and keep warm.

Caramelize the Onions: In the same skillet, add the sliced onions. Cook over low heat for about 15 minutes, stirring occasionally, until they turn golden brown. Sprinkle in sugar to help with caramelization and continue cooking for another 5 minutes until deeply caramelized. Remove and set aside.

Make the Gravy: In the same skillet, sprinkle flour over the residual fat and stir to create a roux. Cook for 1-2 minutes, then gradually whisk in the broth until smooth. Add Worcestershire sauce and let it simmer until thickened, about 5-7 minutes. Season with salt and pepper to taste.

Serve: On a plate, create a mound of creamy mashed potatoes, top it with sausages, spoon over the rich gravy, and finish with a generous portion of caramelized onions on top.
