1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 medium carrot, diced

1 celery stalk, diced

1 can (14.5 oz) diced tomatoes, undrained

4 cups beef broth

1 cup elbow macaroni

1 tablespoon tomato paste

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup frozen peas (optional)

Grated Parmesan cheese, for serving (optional)

Fresh parsley, chopped, for garnish (optional)

Instructions
 

In a large pot over medium heat, add the ground beef. Cook until browned, breaking it apart with a wooden spoon. Drain any excess fat.

    Add the chopped onion, garlic, carrot, and celery to the pot. Sauté until the vegetables are tender, about 5-7 minutes.

      Stir in the diced tomatoes (with juice), beef broth, tomato paste, basil, oregano, salt, and pepper. Bring the mixture to a boil.

        Once boiling, reduce heat to a simmer and add the elbow macaroni. Cook for 8-10 minutes, or until the macaroni is al dente, stirring occasionally.

          If using, add the frozen peas during the last 2-3 minutes of cooking. Stir well to combine.

            Taste and adjust seasoning, adding more salt or pepper if desired.

              Serve hot, garnished with grated Parmesan cheese and chopped parsley, if using.
