4 cups mixed salad greens (romaine, spinach, arugula)

1 cup cooked chicken breast, diced

4 slices bacon, cooked and crumbled

2 hard-boiled eggs, peeled and chopped

1 avocado, diced

1 cup cherry tomatoes, halved

1/2 cup crumbled blue cheese

1/4 cup fresh chives, chopped

1/4 cup red wine vinegar (or lemon juice)

1/2 cup olive oil

Start by cooking the bacon in a skillet over medium heat until crispy. Remove from the skillet and let it drain on paper towels before crumbling into pieces.

    In the same skillet, use a bit of the leftover bacon fat to cook the diced chicken breast until golden brown and heated through (or simply use pre-cooked chicken if preferred). Season with salt and pepper to taste.

      Prepare the hard-boiled eggs by placing them in a pot and covering with water. Bring to a boil and then reduce to simmer for 10-12 minutes. Transfer to an ice bath for 5 minutes, then peel and chop.

        In a large serving bowl, layer the mixed salad greens as the base.

          Evenly distribute the diced chicken, crumbled bacon, chopped hard-boiled eggs, diced avocado, halved cherry tomatoes, and crumbled blue cheese over the greens, creating distinct sections for each ingredient to showcase on top.

            For the dressing, whisk together olive oil, red wine vinegar (or lemon juice), and season with salt and pepper.

              Drizzle the dressing over the top of the salad just before serving.

                Garnish with finely chopped chives for an extra burst of flavor and color.
