1 small head of green cabbage, finely shredded

1 small head of purple cabbage, finely shredded

2 large carrots, grated

1 cup mayonnaise (or Greek yogurt for a healthier option)

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

2 tablespoons honey (or maple syrup for a vegan option)

Salt and pepper to taste

Optional: 1/2 cup chopped parsley or cilantro for garnish

Optional: 1/4 cup raisins or dried cranberries for a sweet twist

Instructions
 

In a large mixing bowl, combine the shredded green cabbage, purple cabbage, and grated carrots. Toss them together until evenly mixed.

    In a separate small bowl, whisk together the mayonnaise (or Greek yogurt), apple cider vinegar, Dijon mustard, and honey (or maple syrup) until smooth and creamy.

      Pour the dressing over the cabbage mixture and gently toss until all the vegetables are well coated.

        Season the coleslaw with salt and pepper to taste. If using, add in the chopped parsley or cilantro for a fresh touch and the raisins or dried cranberries for added sweetness.
