4 medium potatoes, peeled and diced

1 large onion, finely chopped

2 carrots, diced

2 celery stalks, diced

4 cups vegetable broth (or chicken broth)

1 cup cream (or coconut cream for a dairy-free option)

2 tablespoons butter

2 cloves garlic, minced

1 teaspoon dried thyme

Salt and pepper to taste

Fresh dill, for garnish

Instructions
 

In a large pot, melt the butter over medium heat. Add the onions and garlic, cooking until onions become translucent, about 5 minutes.

    Add the diced carrots and celery to the pot, sautéing for another 3-4 minutes.

      Stir in the diced potatoes and thyme, then pour in the vegetable or chicken broth. Bring to a boil, then reduce the heat to a simmer.

        Cover the pot and let it simmer for about 20 minutes, or until the potatoes are tender.

          Once the potatoes are soft, blend the soup using an immersion blender until smooth. If you prefer a chunky texture, blend only half of the soup and leave the rest as is.

            Stir in the cream and season with salt and pepper to taste. Heat through for an additional 5 minutes.

              Serve hot, garnished with fresh dill on top.
