Ingredients
  

1 lb boneless, skinless chicken thighs, diced

1 cup jasmine rice

1 can (14 oz) coconut milk

1 cup chicken broth

1 tablespoon olive oil

2 cloves garlic, minced

1 inch ginger, grated

1 tablespoon soy sauce

1 tablespoon brown sugar

1 teaspoon curry powder

Salt and pepper to taste

Fresh cilantro for garnish

1/2 cup sliced green onions

1 red bell pepper, sliced

1 carrot, julienned

1 lime, cut into wedges for serving

Instructions
 

Marinate the Chicken: In a bowl, combine diced chicken thighs, soy sauce, brown sugar, curry powder, minced garlic, grated ginger, salt, and pepper. Mix well and let it marinate for at least 30 minutes.

    Cook the Rice: Rinse the jasmine rice under running water to remove excess starch. In a pot, combine the rice, coconut milk, and chicken broth. Bring to a simmer, cover, and reduce the heat to low. Cook for about 15 minutes, or until the rice is tender and liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.

      Sauté the Vegetables: While the rice is cooking, heat olive oil in a large skillet over medium heat. Add sliced red bell pepper and carrot, sautéing for about 5 minutes until they become tender. Remove from the skillet and set aside.

        Cook the Chicken: In the same skillet, add the marinated chicken and cook until browned and cooked through, about 7-10 minutes. Stir occasionally to ensure even cooking.

          Assemble the Bowl: Fluff the cooked coconut rice with a fork. Divide the rice among serving bowls, top with the sautéed vegetables and cooked chicken.

            Garnish: Sprinkle sliced green onions and chopped fresh cilantro over the bowls. Serve with lime wedges on the side for a burst of freshness.
