1 can (400ml) coconut cream, chilled overnight

2 tablespoons powdered sugar (adjust to taste)

1 teaspoon pure vanilla extract

1 teaspoon gelatin powder

2 tablespoons warm water

Pinch of salt

Fresh mango or berries, for garnish

In a small bowl, sprinkle the gelatin powder over the warm water and let it sit for about 5 minutes to bloom.

    While the gelatin is blooming, carefully scoop out the solidified cream from the chilled coconut cream can, leaving the watery part behind.

      In a mixing bowl, combine the coconut cream, powdered sugar, vanilla extract, and a pinch of salt. Use a hand mixer or stand mixer to whip the mixture until it becomes light and fluffy, about 3-5 minutes.

        Gently heat the bloomed gelatin in the microwave for about 10-15 seconds until it becomes liquid. Be careful not to boil it.

          Slowly drizzle the gelatin into the whipped coconut mixture while constantly mixing until fully incorporated.

            Spoon the mousse mixture into serving glasses or bowls and refrigerate for at least 2 hours to set.

              Once set, top with fresh mango slices or a handful of berries just before serving.
