Ingredients
  

4 large potatoes, peeled and chopped

1 bunch of kale, stems removed and leaves chopped

1 cup green onions, sliced (white and green parts separated)

4 cups vegetable broth

1 cup whole milk or plant-based milk

3 tablespoons unsalted butter or olive oil

Salt and pepper to taste

Optional: 1/2 teaspoon nutmeg for added warmth

Instructions
 

In a large pot, melt the butter over medium heat. Add the white parts of the green onions and sauté for 2-3 minutes until fragrant.

    Add the chopped potatoes to the pot and pour in the vegetable broth. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are fork-tender.

      Stir in the chopped kale and cook for an additional 5 minutes, until the kale is wilted and tender.

        Use an immersion blender to puree the soup to your desired consistency, or transfer it to a countertop blender in batches. Be careful of the hot liquid!

          Once blended, return the soup to low heat and stir in the milk, seasoning with salt, pepper, and nutmeg if using. Heat through without bringing it to a boil.

            Serve hot, garnishing with the green parts of the green onions for a pop of color.
