4 cups green cabbage, finely shredded

1 cup purple cabbage, finely shredded

1 cup carrots, grated

1 cup pineapple, diced (fresh or canned, drained)

1/2 cup red bell pepper, thinly sliced

1/4 cup fresh cilantro, chopped

3/4 cup Greek yogurt

2 tablespoons honey

2 tablespoons apple cider vinegar

1 tablespoon lime juice

Salt and pepper to taste

Optional: 1/4 cup chopped macadamia nuts for crunch

Instructions
 

In a large mixing bowl, combine the finely shredded green cabbage, purple cabbage, grated carrots, and diced pineapple.

    Add the sliced red bell pepper and chopped cilantro to the bowl, stirring gently to combine.

      In a separate small bowl, whisk together the Greek yogurt, honey, apple cider vinegar, and lime juice until smooth.

        Pour the dressing over the cabbage mixture and toss until all ingredients are evenly coated.

          Season with salt and pepper according to your taste preference. If using, gently fold in the chopped macadamia nuts for an extra crunch.

            Cover the coleslaw and refrigerate for at least 30 minutes to allow the flavors to meld, although it's best if allowed to chill for a few hours.
