Ingredients

For the Cookie Base:

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

For the Cheesecake Filling:

8 oz cream cheese, softened

1/2 cup powdered sugar

1 egg yolk

1 teaspoon vanilla extract

1/4 cup heavy cream

1/4 cup caramel sauce (for drizzling)

For the Topping:

Sea salt flakes (for sprinkling)

Extra caramel sauce (for drizzling on top)

Instructions

Prepare the Cookie Base:

    - Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

      - In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.

        - Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.

          Combine Dry Ingredients:

            - In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

              - Gradually add the dry ingredients to the wet mixture, mixing just until combined. Do not overmix.

                Make the Cheesecake Filling:

                  - In a separate bowl, combine the softened cream cheese, powdered sugar, egg yolk, vanilla extract, and heavy cream. Beat until smooth and creamy.

                    Assemble the Cookies:

                      - Scoop a tablespoon of cookie dough and flatten it slightly in the palm of your hand. Place a small dollop (about a teaspoon) of cheesecake filling in the center and then wrap the cookie dough around it, ensuring the filling is completely enclosed. Repeat for the rest of the dough and filling.

                        - Place the stuffed cookies on the prepared baking sheets, spacing them about 2 inches apart.

                          Bake:

                            - Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but they will set as they cool.

                              Finishing Touches:

                                - Remove cookies from the oven and allow them to cool on the baking sheets for about 5-10 minutes.

                                  - Drizzle with caramel sauce and sprinkle with sea salt flakes before transferring them to a wire rack to cool completely. For extra caramel flavor, drizzle more caramel sauce over the cooled cookies.

                                    Serve:

                                      - Enjoy these decadent salted caramel cheesecake cookies warm or at room temperature. They are perfect for serving at parties or enjoying as an indulgent treat!
