Ingredients

2 cups dried pinto beans

6 cups water

1 medium onion, diced

3 cloves garlic, minced

1 jalapeño, finely chopped (optional for heat)

2 teaspoons cumin

2 teaspoons chili powder

1 teaspoon smoked paprika

Salt, to taste

1 tablespoon olive oil

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Beans: Rinse the dried pinto beans under cold water, removing any debris. Soak the beans in a large bowl of water overnight, or for at least 8 hours. This helps soften the beans and reduces cooking time.

Cook the Beans: Drain and rinse the soaked beans. In a large pot, add the pinto beans and cover them with 6 cups of fresh water. Bring to a boil over medium-high heat, then reduce to a simmer.

Flavor the Beans: Add the diced onion, minced garlic, jalapeño (if using), cumin, chili powder, and smoked paprika to the pot. Stir to combine.

Simmer: Cover the pot and let the beans simmer for 1.5 to 2 hours, or until they are tender. Stir occasionally and add more water if necessary to keep the beans submerged.

Season: Once the beans are tender, stir in the olive oil and season with salt to taste. Simmer for an additional 10 minutes to allow flavors to meld.

Serve: Remove from heat and let cool slightly. Serve the beans warm, garnished with fresh cilantro and lime wedges on the side.

              Prep Time: 15 minutes | Total Time: 2 hours 30 minutes | Servings: 4-6

                - Presentation Tips: Serve the pinto beans in a rustic bowl, topped with fresh cilantro and a lime wedge on the side for squeezing. They can be enjoyed as a side dish or over rice for a heartier meal.
