4 cups fresh corn kernels (or 2 cans of sweet corn, drained)

1 medium onion, diced

2 cloves garlic, minced

3 cups vegetable broth

1 cup coconut milk

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro or chives for garnish

Juice of 1 lime

Instructions
 

In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Add the minced garlic and cook for an additional minute until fragrant.

      Stir in the fresh or canned corn, ground cumin, smoked paprika, salt, and pepper. Sauté for another 3-4 minutes, allowing the corn to caramelize slightly.

        Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for 15 minutes.

          After simmering, use an immersion blender to blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup, then combine it back with the unblended portion.

            Stir in the coconut milk and the juice of one lime. Bring the soup back to low heat and warm it through, adjusting seasoning as needed.

              Serve hot, garnished with chopped cilantro or chives on top.
