4 cups cornbread, crumbled (preferably day-old)

1 cup sweet onion, diced

1 cup celery, diced

1/2 cup carrots, finely chopped

4 cloves garlic, minced

2 cups vegetable broth

2 large eggs, beaten

1 tablespoon dried sage

1 tablespoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup unsalted butter, melted

1/2 cup fresh parsley, chopped

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.

    In a large skillet, melt the butter over medium heat. Sauté the diced onion, celery, and carrots for about 5-7 minutes, or until they are softened. Add the minced garlic and cook for an additional minute.

      In a large mixing bowl, combine the crumbled cornbread, sautéed vegetables, sage, thyme, salt, and black pepper.

        In a separate bowl, whisk together the vegetable broth and beaten eggs. Pour this mixture over the cornbread mixture and combine gently until all ingredients are well mixed, ensuring the cornbread is moistened.

          Fold in the chopped parsley for a fresh flavor boost.

            Transfer the dressing mixture into the prepared baking dish, spreading it out evenly. Cover with aluminum foil and bake in the preheated oven for 25 minutes.

              Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the dressing is set in the middle.

                Let the dressing cool for 10 minutes before serving.
