1 cup cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk (or almond milk for a dairy-free version)

1/4 cup unsalted butter, melted

2 large eggs

1 cup corn kernels (fresh or frozen, thawed)

1/2 teaspoon smoked paprika (optional for a unique twist)

Instructions
 

Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners or grease it with cooking spray.

    In a large mixing bowl, whisk together the cornmeal, all-purpose flour, sugar, baking powder, and salt until well combined.

      In another bowl, mix the milk, melted butter, and eggs until smoothly blended.

        Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; some lumps are okay.

          Gently fold in the corn kernels and smoked paprika, if using, to add a depth of flavor.

            Divide the batter evenly among the muffin cups, filling each about 2/3 full.

              Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center comes out clean, and the edges are lightly golden.

                Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
