2 Cornish game hens (about 1-1.5 lbs each)

2 tablespoons olive oil

1 lemon, zested and quartered

1 orange, zested and quartered

4 cloves garlic, minced

2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley for garnish

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Hens: Rinse the Cornish game hens under cold water and pat them dry with paper towels. Place them breast-side up in a roasting pan.

      Make the Marinade: In a small bowl, mix together the olive oil, garlic, lemon zest, orange zest, thyme, rosemary, paprika, salt, and pepper to create a flavorful marinade.

        Coat the Hens: Rub the marinade evenly over the hens, making sure to get some underneath the skin for extra flavor. Stuff the cavities of the hens with the quartered lemon and orange.

          Roast: Place the hens in the preheated oven and roast for 50-60 minutes, or until the skin is crispy and a meat thermometer reads 165°F (75°C) when inserted into the thickest part of the thigh. Halfway through cooking, baste the hens with their own juices for an even crispier skin.

            Rest and Serve: Once cooked, remove the hens from the oven and let them rest for about 10 minutes before carving.

              Garnish and Plate: Arrange the hens on a platter, garnish with fresh parsley, and serve with your choice of sides.
