1 cup cottage cheese

1 cup sour cream

1 packet taco seasoning (1 oz)

1 cup shredded cheddar cheese

1 can (15 oz) black beans, rinsed and drained

1 cup corn (canned or frozen)

1 cup diced tomatoes (fresh or canned)

1/2 cup sliced black olives

1 jalapeño, finely chopped (optional)

1/4 cup chopped fresh cilantro

Instructions
 

In a medium bowl, combine the cottage cheese and sour cream. Mix until smooth and well incorporated.

    Add the taco seasoning to the cottage cheese mixture and stir until evenly distributed.

      Layer half of the cottage cheese mixture into the bottom of a serving dish.

        Spread the black beans evenly over the cottage cheese layer.

          Next, add a layer of corn, followed by the diced tomatoes.

            Sprinkle half of the shredded cheddar cheese and black olives over the tomatoes.

              If desired, add the chopped jalapeño for an extra kick.

                Carefully layer the remaining cottage cheese mixture on top, smoothing it out gently.

                  Top with the remaining cheddar cheese, black olives, and finish with fresh cilantro for garnish.

                    Serve immediately or chill for 30 minutes to allow the flavors to meld together.
