4 bone-in pork chops (about 1 inch thick)

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and black pepper, to taste

1 cup vegetable oil (for frying)

4 strips of bacon, chopped

2 tablespoons butter

2 tablespoons all-purpose flour (for gravy)

2 cups milk

1 teaspoon Worcestershire sauce

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Pork Chops: In a bowl, soak the pork chops in buttermilk for at least 1 hour, or overnight in the refrigerator for best results. This tenderizes the meat and enhances flavor.

    Prepare the Coating: In a shallow dish, combine flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well.

      Coat the Pork Chops: Remove the pork chops from the buttermilk, letting the excess drip off. Dredge each chop in the seasoned flour, ensuring it’s well coated. Shake off any excess flour.

        Heat the Oil: In a large skillet, heat the vegetable oil over medium-high heat. To test if the oil is ready, drop a small bit of flour into it – if it sizzles, it's hot enough.

          Fry the Pork Chops: Carefully place the coated pork chops in the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through (internal temperature should reach 145°F). Remove and place on a paper towel-lined plate to drain.

            Make the Bacon Gravy: In the same skillet, reduce the heat to medium and add the chopped bacon. Cook until crispy, about 5 minutes. Remove the bacon and set aside, leaving the grease in the pan.

              Create the Roux: Add the butter to the skillet and let it melt. Sprinkle in the 2 tablespoons of flour, stirring continuously for about 2 minutes until the mixture is light golden brown.

                Add Milk and Simmer: Gradually pour in the milk while whisking to prevent lumps. Stir in Worcestershire sauce, salt, and pepper to taste. Simmer until the gravy thickens, about 5-7 minutes. Stir in the reserved bacon.

                  Serve: Place the fried pork chops on a serving plate and generously ladle the bacon gravy over the top. Garnish with fresh parsley if desired.
