300g linguine pasta

2 chicken breasts, diced

4 tablespoons cowboy butter (see below for recipe)

1 small onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, sliced

1 cup cherry tomatoes, halved

1 teaspoon smoked paprika

1 teaspoon dried oregano

½ teaspoon chili flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Cowboy Butter Ingredients:

½ cup unsalted butter, softened

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon dried parsley

1 tablespoon fresh lemon juice

1 teaspoon Worcestershire sauce

Salt and pepper to taste

Instructions
 

Prepare the Cowboy Butter:

    - In a medium bowl, mix the softened butter with garlic powder, onion powder, dried parsley, lemon juice, Worcestershire sauce, salt, and pepper.

      - Mix until well combined, then refrigerate for at least 30 minutes to firm up.

        Cook the Linguine:

          - Bring a large pot of salted water to a boil.

            - Add the linguine and cook according to package instructions until al dente.

              - Reserve ½ cup of pasta water before draining. Drain and set aside.

                Cook the Chicken:

                  - In a large skillet over medium heat, add 2 tablespoons of the cowboy butter.

                    - Once melted, add the diced chicken and season with smoked paprika, oregano, salt, and pepper.

                      - Cook for about 5-7 minutes until the chicken is cooked through and golden brown.

                        Add Vegetables:

                          - To the skillet, add chopped onions and garlic, cooking for an additional 2-3 minutes until the onion is translucent.

                            - Add the sliced red bell pepper and cherry tomatoes, cooking for another 4-5 minutes until the vegetables are tender.

                              Combine Pasta and Sauce:

                                - Add the cooked linguine to the skillet and toss everything together.

                                  - Add the remaining cowboy butter and reserved pasta water gradually while tossing to create a creamy sauce.

                                    - Adjust seasoning with salt, pepper, and chili flakes if desired.

                                      Serve:

                                        - Plate the linguine into bowls and garnish with fresh parsley.

                                          - Serve with grated Parmesan cheese if you like!
