2 lobster tails

1/2 cup unsalted butter, melted

2 cloves garlic, minced

1 tablespoon fresh lemon juice

1 teaspoon smoked paprika

1 teaspoon chopped fresh parsley

1 teaspoon chopped fresh chives

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

Lemon wedges for serving

Instructions
 

Preheat your grill or oven to 375°F (190°C).

    Carefully split the lobster tails in half lengthwise using kitchen shears, cutting through the top shell and stopping before you cut through the bottom. Gently pull apart the shell to expose the lobster meat.

      In a mixing bowl, combine the melted butter, minced garlic, lemon juice, smoked paprika, parsley, chives, cayenne pepper, salt, and black pepper. Stir well to combine all the flavors.

        Place the lobster tails on a grill-safe tray or directly on the grill, shell side down. Brush the meat generously with the cowboy butter mixture.

          Grill the lobster tails for about 6-8 minutes or until the meat is opaque and reaches an internal temperature of 140°F (60°C). If using an oven, bake for about 12-15 minutes.

            Once cooked, remove the lobster tails from the grill or oven and brush with any remaining cowboy butter.

              Squeeze fresh lemon juice over the lobster tails before serving.
