Ingredients

4 ears of fresh corn, husked

1/2 cup unsalted butter, melted

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon fresh chives, chopped

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Juice of 1 lime

Salt and pepper to taste

Grated Parmesan cheese (optional, for garnish)

Instructions

Preheat your oven to 400°F (200°C).

Prepare a baking sheet by lining it with aluminum foil for easy cleanup.

In a bowl, combine the melted butter with minced garlic, chopped parsley, chopped chives, smoked paprika, cayenne pepper, lime juice, salt, and pepper. Whisk together until well blended.

Place the husked corn on the prepared baking sheet. Brush or slather the cowboy butter mixture generously over each ear of corn, ensuring they are well coated.

Wrap each ear of corn in aluminum foil, sealing them tightly to lock in moisture.

Roast the corn in the preheated oven for about 25-30 minutes, turning halfway through the cooking time for even roasting.

Carefully unwrap the foil (watching for steam) and return the corn to the baking sheet. If desired, sprinkle grated Parmesan cheese over the hot corn for added flavor.

Serve immediately with extra cowboy butter drizzled on top for that extra kick!
