1 lb flank steak

Salt and pepper (to taste)

8 small slider buns

1/2 cup mayonnaise

1/4 cup unsalted butter, softened

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon chives, chopped

1 teaspoon smoked paprika

1 teaspoon Worcestershire sauce

1 cup arugula or mixed greens

Optional: sliced jalapeños for heat

Prepare the Cowboy Butter: In a small bowl, mix the softened butter, minced garlic, chopped parsley, chives, smoked paprika, Worcestershire sauce, salt, and pepper. Stir until fully combined and set aside.

    Cook the Steak: Season the flank steak with salt and pepper on both sides. Heat a grill or skillet over medium-high heat. Cook the steak for about 4-5 minutes per side for medium-rare, or until it reaches your desired doneness.

      Rest the Steak: Once cooked, remove the steak from the heat and let it rest for about 5-10 minutes before slicing. This helps retain its juices.

        Slice the Steak: Cut the rested steak against the grain into thin strips.

          Prepare the Slider Buns: Toast the slider buns on the grill or in a toaster until lightly golden.
