Ingredients
  

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 tsp chili powder

1 tsp cumin

Salt and pepper, to taste

1 cup shredded cheddar cheese

1 cup tater tots

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.

      Add the diced onion and minced garlic to the skillet; sauté until the onion is translucent (about 3-4 minutes).

        Stir in the black beans, corn, diced tomatoes (with juice), chili powder, cumin, salt, and pepper. Mix thoroughly and simmer for 5 minutes.

          Transfer the beef mixture into a greased 9x13 inch casserole dish.

            Evenly sprinkle the shredded cheddar cheese over the beef mixture.

              Top with a layer of tater tots, arranging them evenly across the cheese.

                Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and crispy.

                  Allow to cool slightly before serving, and garnish with fresh cilantro.
