8 oz rotini pasta

1 cup black beans, rinsed and drained

1 cup sweet corn, frozen or canned

1 red bell pepper, diced

1 green bell pepper, diced

1/2 red onion, finely chopped

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

1 avocado, diced

1/4 cup olive oil

2 tablespoons lime juice

2 teaspoons chili powder

Salt and pepper to taste

Instructions
 

Begin by cooking the rotini pasta according to package instructions in a pot of salted boiling water. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside to cool.

    In a large mixing bowl, combine the black beans, sweet corn, diced red and green bell peppers, red onion, and halved cherry tomatoes.

      Add the cooled rotini pasta to the bowl with the vegetables. Gently fold in the diced avocado and chopped cilantro, ensuring not to mash the avocado.

        In a separate small bowl, whisk together the olive oil, lime juice, chili powder, salt, and pepper until well combined.

          Pour the dressing over the pasta salad and toss gently until everything is well coated.

            Taste and adjust seasonings as necessary, adding more salt, pepper, or lime juice if desired.

              Let the salad chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.
