2 cups sweet corn, fresh or canned (drained)

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded cheddar cheese

1 cup diced bell peppers (red, green, or yellow)

1/4 cup red onion, finely chopped

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon cumin

Salt and black pepper, to taste

1/4 cup fresh cilantro, chopped (optional for garnish)

Tortilla chips or veggie sticks for serving

Instructions
 

In a large mixing bowl, combine the softened cream cheese and sour cream, and mix until well blended and smooth.

    Add the sweet corn, diced bell peppers, red onion, shredded cheddar cheese, garlic powder, smoked paprika, cumin, salt, and black pepper to the cream cheese mixture.

      Stir everything together until all ingredients are evenly incorporated.

        Transfer the mixture to a medium-sized baking dish, spreading it evenly.

          Preheat your oven to 350°F (175°C) and bake the dip for about 20-25 minutes or until it's hot and bubbly.

            Remove from the oven and let cool slightly. If desired, garnish with freshly chopped cilantro for added flavor.
