Instructions

Prepare the Cornbread: Bake a cornbread mix according to package instructions or your favorite recipe. Once cooled, crumble into bite-sized pieces and set aside.

Make the Dressing: In a bowl, combine sour cream, lime juice, cumin, salt, and pepper. Mix well to create a zesty dressing. Adjust seasoning to taste.

Layer the Trifle: In a large glass trifle bowl or individual clear glasses, start by placing a layer of crumbled cornbread at the bottom.

Add the Next Ingredients: On top of the cornbread, add layers of black beans, corn, cherry tomatoes, diced avocado, and red onion.

Drizzle Dressing: Pour a generous amount of the prepared dressing over the layer.

Repeat Layers: Repeat the layering process until all ingredients are used, finishing with a layer of cheddar cheese on top.

Garnish: Sprinkle chopped cilantro over the top cheese layer for a fresh touch.

Chill: Cover and refrigerate for at least 30 minutes to allow the flavors to meld together.

Serve: Gently scoop out portions to serve, ensuring you get a bit of every layer in each scoop.
