1 lb (450g) bacon, chopped

1 medium onion, finely chopped

2 cups fresh cranberries

1 cup brown sugar

1/2 cup apple cider vinegar

1 teaspoon Dijon mustard

1/2 teaspoon allspice

1/4 teaspoon black pepper

1/4 teaspoon salt

1/2 cup water

Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy, about 8-10 minutes. Use a slotted spoon to remove the bacon and place it on a paper towel-lined plate to drain.

    Sauté Onions: In the same skillet, and with the bacon grease still in the pan, add the finely chopped onion. Sauté until the onion is translucent and begins to caramelize, about 5-7 minutes.

      Add Cranberries and Ingredients: Add the fresh cranberries, brown sugar, apple cider vinegar, Dijon mustard, allspice, black pepper, and salt to the skillet. Stir well to combine all ingredients.

        Simmer: Pour in the water and bring the mixture to a simmer. Reduce the heat to low and cook for about 20-25 minutes, stirring occasionally, until the cranberries have burst and the mixture has thickened.

          Blend the Mixture: For a smoother consistency, use an immersion blender to blend the jam to your desired thickness, or transfer to a food processor and pulse a few times.

            Add Bacon: Stir in the crispy bacon pieces to the cranberry mixture. Cook for an additional 5 minutes to ensure everything is well combined and heated through.
