2 cups all-purpose flour

1 cup fresh or frozen cranberries, roughly chopped

1/2 cup granulated sugar

1/4 cup brown sugar, packed

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 tablespoon orange zest (from about 1 orange)

1/2 cup orange juice (freshly squeezed if possible)

1/2 cup unsweetened applesauce

1/4 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with non-stick spray.

    In a large mixing bowl, combine the all-purpose flour, chopped cranberries, granulated sugar, brown sugar, baking powder, baking soda, salt, and orange zest. Mix well to evenly distribute the dry ingredients.

      In another bowl, whisk together the orange juice, applesauce, vegetable oil, eggs, and vanilla extract until well combined.

        Pour the wet ingredients into the dry ingredients and stir gently until just combined; be careful not to overmix. Some lumps are okay!

          Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.

            Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.

              Once baked, let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
