4 bone-in pork chops (1-inch thick)

1 can (10.5 oz) cream of mushroom soup

1 cup fresh mushrooms, sliced (such as cremini or button)

1 medium onion, diced

2 cloves garlic, minced

1 cup chicken broth

1 tablespoon olive oil

1 teaspoon thyme leaves (fresh or dried)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sear the Pork Chops: In a large skillet, heat the olive oil over medium-high heat. Season the pork chops with salt and pepper. Add the pork chops to the skillet and sear for about 4-5 minutes on each side, or until golden brown. Remove from the skillet and set aside.

    Sauté Vegetables: In the same skillet, add the diced onion and sauté for 2-3 minutes until softened. Add the minced garlic and sliced mushrooms, cooking for another 5 minutes until the mushrooms are browned and tender.

      Combine Ingredients: Pour in the chicken broth, stirring to combine. Add the cream of mushroom soup and thyme. Mix until well incorporated and let it come to a simmer.

        Cook the Pork Chops: Return the seared pork chops to the skillet, spooning some of the mushroom mixture over the top. Cover the skillet with a lid, reduce the heat to low, and let it cook for about 20 minutes, or until the pork chops are cooked through (internal temperature should reach 145°F).
