8 oz egg noodles

1 can (12 oz) chunk light tuna in water, drained

1 cup frozen peas

1 cup mushrooms, sliced

1/2 cup onion, finely chopped

2 cloves garlic, minced

1 can (10.5 oz) cream of mushroom soup

1 cup milk

1/2 cup shredded cheddar cheese

2 tablespoons olive oil

1 teaspoon dried thyme

Salt and pepper, to taste

1/2 cup crispy fried onions (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Noodles: Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes. Add the sliced mushrooms and frozen peas, and cook for an additional 5 minutes until the mushrooms are softened.

      Combine Ingredients: In the same skillet, add the drained tuna, cream of mushroom soup, milk, and dried thyme. Stir well to combine and heat through. Season with salt and pepper to taste.

        Mix Noodles: Add the cooked egg noodles to the skillet and gently fold everything together until well coated. Allow to simmer for about 5 minutes to heat through. If the mixture is too thick, add a little more milk to reach your desired consistency.

          Add Cheese: Once heated, stir in the shredded cheddar cheese until melted and creamy.

            Serve & Garnish: Spoon the creamed tuna and noodles into serving bowls. Top with crispy fried onions for added crunch and garnish with fresh chopped parsley.
