12 oz penne pasta

12 oz andouille sausage, sliced

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

1 can (14 oz) diced tomatoes

1 cup heavy cream

1 teaspoon Cajun seasoning

Salt and pepper to taste

1 cup shredded Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Sausage: In a large skillet over medium heat, add olive oil. Once hot, add the sliced andouille sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add diced onion and bell pepper. Cook for about 4-5 minutes until the onion is translucent. Add minced garlic and cook for an additional minute until fragrant.

        Combine Ingredients: Return the cooked sausage to the skillet. Add the can of diced tomatoes (with juice), heavy cream, and Cajun seasoning. Stir well to combine all ingredients.

          Mix the Pasta: Allow the mixture to simmer for about 3-4 minutes to thicken slightly. Season with salt and pepper to taste. Add the cooked pasta to the skillet and toss everything together until well coated in the creamy sauce.

            Add Cheese: Sprinkle in the shredded Parmesan cheese and stir until melted and creamy, adjusting seasoning as needed.
