2 ripe avocados, pitted and peeled

2 cloves garlic, minced

1 tablespoon lemon juice

1/4 cup fresh basil leaves, plus extra for garnish

2 tablespoons olive oil

1/4 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

12 ounces spaghetti or your favorite pasta

1/4 cup grated Parmesan cheese (optional)

Cherry tomatoes, halved (for garnish)

Instructions
 

Cook Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve 1 cup of the pasta water and then drain the pasta.

    Make Avocado Sauce: In a blender or food processor, combine the avocados, minced garlic, lemon juice, basil leaves, olive oil, red pepper flakes, salt, and pepper. Blend until smooth and creamy. If the sauce is too thick, add a little bit of reserved pasta water to reach your desired consistency.

      Combine Pasta and Sauce: In the same pot used for the pasta, add the drained pasta and the creamy avocado sauce. Toss everything together until the pasta is well coated with the sauce.

        Adjust Flavor: Taste the pasta and adjust the seasoning with more salt, pepper, or lemon juice if necessary. If you like a cheesy flavor, stir in the grated Parmesan cheese at this stage.
