200g spaghetti

150g bacon, diced

250g mushrooms, sliced (preferably cremini or button)

3 cloves garlic, minced

1 cup heavy cream

½ cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Bacon: In a large skillet over medium heat, add the diced bacon. Cook until crispy, about 5-7 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate and drain excess fat from the skillet, leaving about 1 tablespoon in the pan.

      Cook the Mushrooms: In the same skillet, add the olive oil. Once hot, add the sliced mushrooms, and sauté until they are golden brown and tender, about 5-6 minutes. Add the minced garlic and cook for an additional minute, until fragrant.

        Make the Sauce: Lower the heat, then pour in the heavy cream. Stir well and bring to a gentle simmer. Add the thyme, and season with salt and pepper to taste. Let the sauce thicken slightly, about 3-4 minutes.

          Combine Everything: Add the Parmesan cheese to the sauce and stir until melted and creamy. Then, add the cooked spaghetti and crispy bacon back to the skillet. Toss everything together until the pasta is well coated with the sauce.

            Serve: Plate the pasta and sprinkle with fresh parsley for garnish. You can add extra Parmesan on top if desired.
