1 lb beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

8 oz mushrooms, sliced (button or cremini)

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

1 cup beef broth

1 cup sour cream

2 tablespoons all-purpose flour

Salt and pepper, to taste

12 oz egg noodles

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Noodles: Bring a large pot of salted water to a boil. Add egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Sear the Beef: In a large skillet or pan, heat olive oil over medium-high heat. Add the sliced beef in batches to avoid overcrowding the skillet. Season with salt and pepper. Sear the beef for about 2-3 minutes on each side until browned. Remove from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add diced onion and sauté for about 3-4 minutes until translucent. Next, add the minced garlic and sliced mushrooms. Cook for an additional 5-7 minutes until the mushrooms are tender and browned.

        Create the Sauce: Sprinkle flour over the veggies, stirring well to coat. Gradually pour in the beef broth while stirring continuously to avoid lumps. Add Worcestershire sauce and Dijon mustard. Let the mixture simmer and thicken for about 3-5 minutes.

          Combine Ingredients: Lower the heat and return the seared beef to the skillet. Stir in the sour cream until everything is well combined. Adjust seasoning with additional salt and pepper as needed.

            Serve: Toss the cooked egg noodles into the beef stroganoff skillet, mixing gently to coat the noodles in the creamy sauce. Garnish with freshly chopped parsley before serving.
