Ingredients

8 oz penne pasta

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup buffalo sauce (adjust to taste)

1 cup heavy cream

1 cup shredded cheddar cheese

1/2 cup crumbled blue cheese (optional for extra flavor)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté Aromatics: In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for another 1 minute until fragrant.

Add Chicken: Add the shredded chicken to the skillet, followed by the buffalo sauce. Stir to coat the chicken completely, heating through for about 2-3 minutes.

Make it Creamy: Lower the heat and slowly pour in the heavy cream while stirring continuously. Allow the mixture to simmer gently for about 5 minutes to thicken slightly.

Combine: Stir in the cooked penne pasta, cheddar cheese, and blue cheese (if using). Mix until the pasta is well-coated with the creamy buffalo sauce. Let it cook for an additional 2-3 minutes to ensure everything is heated through.

Season to Taste: Taste and adjust the seasoning with salt, pepper, or more buffalo sauce if needed.

Serve: Remove from heat and garnish with freshly chopped parsley.
