1 pound boneless, skinless chicken breasts, diced

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning

4 cups chicken broth

1 cup cream cheese, softened

1 cup heavy cream

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Tortilla chips (for serving)

Instructions
 

In a large pot over medium heat, add diced chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.

    In the same pot, add chopped onion, garlic, and bell pepper. Sauté until the vegetables are tender, about 4-5 minutes.

      Return the chicken to the pot and stir in black beans, corn, diced tomatoes with green chilies, and taco seasoning. Mix well.

        Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce heat and let simmer for 15 minutes to let flavors meld.

          Lower the heat and stir in cream cheese until fully incorporated, followed by the heavy cream. Mix until the soup is creamy and smooth. Season with salt and pepper to taste.

            Simmer for an additional 5 minutes, then remove from heat.
