1 lb (450g) potato gnocchi

8 oz (225g) chorizo, sliced or crumbled

1 cup heavy cream

1 cup cherry tomatoes, halved

2 cups spinach, roughly chopped

1 small onion, diced

3 cloves garlic, minced

1/2 cup grated Parmesan cheese

2 tbsp olive oil

Salt and pepper, to taste

Fresh basil or parsley, for garnish

Cook the Gnocchi: In a large pot of boiling salted water, cook the gnocchi according to package instructions. Once they float to the surface, they are done. Drain and set aside.

    Sauté the Chorizo: In a large skillet, heat the olive oil over medium heat. Add the chorizo and cook for about 5-7 minutes, stirring frequently, until the chorizo is browned and crispy. Remove the chorizo from the skillet and set aside, leaving the oils in the pan.

      Sauté Aromatics: In the same skillet, add the diced onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.

        Add Cream and Tomatoes: Pour in the heavy cream and add the cherry tomatoes. Stir to combine, then let it simmer for about 5 minutes, allowing the sauce to thicken slightly.

          Combine Ingredients: Add the cooked gnocchi back into the skillet along with the chorizo and chopped spinach. Stir until the spinach is wilted and everything is well combined. Cook for another 2-3 minutes to heat through.

            Finish the Dish: Remove from heat and stir in the grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste.
