1 lb (450g) gnocchi (store-bought or homemade)

8 oz (225g) chorizo sausage, casing removed and crumbled

1 cup (240ml) heavy cream

1 cup (100g) spinach, fresh

1/2 cup (50g) grated Parmesan cheese

2 cloves garlic, minced

1 tbsp olive oil

1/2 tsp red pepper flakes (optional for heat)

Salt and pepper to taste

Fresh parsley, chopped for garnish

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions until they float to the surface (about 2-3 minutes). Drain and set aside.

    Sauté the Chorizo: In a large skillet over medium heat, add the olive oil and crumble in the chorizo. Cook for about 5-7 minutes until the chorizo is browned and crispy.

      Add Garlic: Stir in the minced garlic and cook for an additional minute until fragrant.

        Make it Creamy: Lower the heat and pour in the heavy cream. Stir to combine, scraping up any browned bits from the skillet. Allow the mixture to simmer for about 3-5 minutes until slightly thickened.
