1 cup green or brown lentils, rinsed

1 tablespoon coconut oil

1 onion, diced

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon curry powder

1 teaspoon ground turmeric

1 teaspoon ground cumin

1 can (14 oz) coconut milk

4 cups vegetable broth

2 cups spinach, fresh or frozen

1 medium carrot, diced

Salt and pepper to taste

Juice of 1 lime

Fresh cilantro, for garnish

Instructions
 

In a large pot, heat the coconut oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and grated ginger; cook for another 1-2 minutes until fragrant.

      Add the curry powder, turmeric, and cumin, stirring to coat the onion mixture evenly. Cook for 1 minute to release the spices' flavors.

        Pour in the coconut milk and vegetable broth, then add the rinsed lentils and diced carrot. Stir to combine.

          Bring the soup to a boil, then lower the heat to a simmer. Cover and cook for about 25-30 minutes, or until the lentils are tender.

            Add the spinach and simmer for an additional 5 minutes until the spinach is wilted.

              Season the soup with salt, pepper, and lime juice to taste.

                Serve hot, garnished with fresh cilantro on top.
